Mealplanning is fun!

Saturdays are kind of a fun day for me. My partner is at work, the kids and I get to sleep in and I get to catch up on laundry, meal planning and memes on facebook. My kids on the other hand dread this day as I start cleaning out the leftovers from the past 2 weeks and putting together a smorgasbord of food that will get eaten or thrown away at the end of the day. Today we have pierogies, mac & cheese, chilli, chicken parmesan, garlic butter noodles, pot pies and a ton of dishes for me to do!

 So without further ado I bring to you the meal plan for next week AKA things that will be part of leftover day in another 2 weeks! This is a short week for me as we have dinner plans Thursday-Saturday, at least I get a chance to study!

Sunday- Pork Chops, Mashed Potatoes, Corn
Monday- Manwich & Tater tots
Tuesday- Tacos
Wednesday- Beef Stew 
Thursday- #1 Happy Birthday Dinner!

Miss Manda's Meatloaf

I must admit I stole the base of this recipe from my ex who inevitably stole it from my ex mother in law, however its a staple in my home and after some tweaking we have come to love it!


3 lbs hamburger meat
3 eggs
1 onion (chopped)
1 tsp minced garlic
1 cup Italian seasoned bread crumbs
1 cup milk

In a large bowel mix all ingredients together. flatten  meat mixture into a cake or loaf pan. Bake at 350 for 2 hours. Check the pan every 30-45 min for grease and dispose of any excess grease as needed. Cut into the middle of the meatloaf to ensure the meat has cooked thoroughly. Let sit for 15-20 min to firm.

Topping:

1 cup ketchup
1/2 cup brown sugar

Mix together and brush on to top of meatloaf

*Tip: You can use more or less sugar in the topping or make more of it to smother your meat in!

Miss Manda's Beef Stew

Tip: If you cook meat in your crock pot, put it at the bottom before any other ingredients. You can cook meat from a frozen state this way although it will take a bit longer.

Tip 2: Put potatoes and carrots in last so they do not get mushy

2 lbs stew meat
1 lb bag baby carrots
1 tsp minced garlic
2 small onions or 1 large
3 potatoes
2 cups beef broth
1 tbsp Worcestershire 
1/2  tsp black pepper
1/2 cup flour
1 packet of turkey gravy mix 
1 tsp paprika
2 tsp salt

Cook on high for 4-6 hours or low for 8-12 hours.
